Preparing Soft Drink For Service
Quality standard
Soft drink by glass is poured into a Hi-ball 29.6 cl glass with ice, unless specified by the guest, from the soft drink dispenser.
Well-chilled soft drink in the can is poured for the guest into a Hi-ball 29.6 cl glass, with ice unless specified by the guest, on the table during service.
Procedures
Post Mix Soft Drink.
1. Get a Hi-ball 29.6 cl glass. Check for cleanliness and condition.
2. Fill the glass with ice, UNLESS specified by the guest.
3. Bring the glass to the tap of the soft drink dispenser.
4. Pull the lever so the soft drink sprays into the glass.
5. Fill until 1.5 cm below the rim of the glass, avoid over flowing the glass, and wasting the soft drink.
Canned Soft Drink.
1. Get a Hi-ball 29.6 cl glass. Check for cleanliness and condition.
2. Get a well chilled can of soft drink.
3. Check the cleanliness of the can and wipe around with a service cloth.
4. Set the glass and can on the pick up area on the counter.
NOTE : Can is opened and poured for the guest at the table during service.
