Preparing Beer for Service
Quality standard
Draft beer is poured into a chilled pilsner glass. Iced cold bottled and canned beer are poured into a chilled pilsner glass on the table upon service to the guest.
Procedures
Draft Beer
1. Read the Captain’s Order for the type of beer specified by the guest.
2. Get a chilled pilsner glass. Check for cleanliness and condition.
3. Bring the glass under tap of the draft beer dispenser, slightly tilting the glass.
4. Pull the handle of the tap slowly, letting the beer slide slowly on the side of the glass, to prevent too much froth.
5. Slowly straighten the glass, as the beer fill up the glass. Pour into 1.5 cm below the rim of the glass, to prevent over flowing the glass.
6. Set the glass on the pick up area on the bar counter.
7. Wipe the body of the glass for any spills.
Bottled / Canned Beer
1. Read the Captain’s Order for the type of beer specified by the guest.
2. Get a chilled pilsner glass. Check for cleanliness and condition.
3. Get a very well chilled bottle or can of beer.
4. Open the beer bottle using the opener.
5. Check bottle or can for cleanliness.
6. Set the chilled pilsner glass and open the bottle or can, on the pick up area on the counter.
NOTE: Canned beer is opened by the table while serving the guest.
