Preparing Juice
Quality standard
Chilled fresh juice or canned juice is poured into a Hi-ball 29.6 cl glass, no more than five minutes after the Captain’s Order has been received.
Procedures
Fresh Orange and Fresh Pineapple Juice
1. Read the Captain’s Order for the type of juice specified by the guest.
2. Get a Hi-ball 29.6 cl glass. Check for cleanliness and condition.
3. Pour the well chilled a freshly juice into a glass until 1.5 cm below the rim of the glass.
4. Garnish.
5. Set the glass on the pick up area on the counter.
Fresh Coconut Juice.
1. Read the Captain’s Order for the type of juice ordered by the guest.
2. Transfer from the cold kitchen at least 5 pcs. of coconut juice in the shell, at the start of shift, and chill in the chiller.
3. Get a piece of coconut from the chiller, open the covering top to check, and insert 1 bending straw.
4. Set on the bread plate with linen under liner.
5. Set the B & B plate with coconut on the pick area on the bar counter.
Fresh Watermelon Juice.
1. Get a Hi-ball glass 29.6 cl glass. Check for cleanliness and condition.
2. Place sliced of water melon without the seeds (200 grams) into the blender pitcher.
3. Place ice and 3 cl of sugar syrup into the blender pitcher.
4. Blend until fruit is completely liquefied.
5. Pour juice into the glass until 1.5 cm below the rim of the glass.
6. Set the glass on the pick up area on the counter.
Chilled Pineapple, Grapefruit, Apple, Tomato…
1. Get a Hi-ball glass 29.6 cl. Check for cleanliness and condition.
2. Pour the well chilled juice into the glass until 1.5 cm below the rim of the glass.
3. Set the glass on the pick up area on the bar counter.
