Quality standard
All the drinks prepared in the bar are measured using the standard jigger, provided for all bar outlets
Procedures
1. Use the standard jigger size to measure each ingredients used in the preparation of drinks.
2. Pour the ingredients into the jigger, until just below the rim. The jigger is calibrated according to the ¼, ½, ¾ and full.
3. For Cocktail, follow the quantity specified in the recipes.
4. For any spillage, document the quantity lost through the Spoilage/ Spillage / Breakage / Lost Report form at the end of the shift. Reason must be valid and acceptable.
